This is a recipe I’ve been making for so long, I can’t believe I didn’t share this before. It’s a really rich and flavourful dish which requires minimal ingredients and it’s also one of those recipes that tastes better after a day or two.
Here is a very quick recipe for a great and nutritious alternative to rice! It takes about 15 minutes to make, it keeps very well in the fridge, it goes well with everything and it’s just a great way to eat a lot of veggies! Feel free to add any vegetables or spices you like.

This is such a classic Colombian breakfast recipe. It takes about 5 minutes to make and the result is a mixture of sweet and savoury eggs. Usually we have it with some patacones (plantain chips) or arepa which is like a savoury pancake made with corn flour and topped with fresh cheese. I like serving mine with some crispy bacon on the side and some tea:)
