Lately I’ve been getting a bit tired of eating salads for lunch and so I have been making this simple hummus recipe which is easy to make, creamy and full of flavour and it goes well with everything. What I love about it is that it’s a really easy way to eat a lot of raw vegetables. Lunch is when I eat most of my vegetables and this is a great alternative to a salad. It lasts about a week in the fridge without going bad and it’s also good for a packed lunch.
I use some roasted cauliflower from the night before and placed it in the vitamix with zucchini, spices, lime juice, than, lots of olive oil and garlic and blend until smooth and creamy. When I serve it I like to put some chopped parsley over it and a little more olive oil. Delish!
