If you follow me on Instagram then you know we have a great supply of eggs at the moment. Since we don’t have harsh seasons in Colombia except for rainy and dry seasons, egg laying doesn’t really get affected by lack of light or dropping temperatures.
Last year we were a bit frustrated because our chickens were getting a bit old and not laying as many eggs as we wanted so we decided to bring 25 new girls to the coop. They have all started to lay and it’s been truly amazing to have all those lovely eggs.
Since we started to get our own eggs a few years ago we have become very spoiled by the superior flavour and quality of farm fresh eggs from happy chickens. The yolks are bright yellow, almost orange, the shells are strong and come in so many different colours and best of all, they have an incredible flavour.
At the moment I’m collecting an average of 20 eggs daily, which is quite huge, luckily we eat a lot of eggs and love them. We also give some to the dogs because they are also so good for them. I really need to get creative with some egg recipes to make the most of them.
Collecting eggs is one the most enjoyable and rewarding chores of the day.
